My friend Diana and her daughter didn’t find them lemony enough, whereas my husband and my daughter Dina thought they are too lemony. But my other daughter, Sara, thought they were perfect! You decide; you may add a little more lemon juice as my friend suggested or leave the recipe as is.
The added pudding makes these cookies soft and yummy, and adds another level of lemon to the mix!

A little note about the colouring, if your yolks are not dark enough, you will notice your batter will be a bit lighter. You may add a touch of food colouring if you desire.
What you will need:
- 1 cup softened unsalted butter
- 1 and 1/4 cup sugar
- 1 (102 gr) package instant lemon pudding
- 2 eggs
- 1 tsp lemon zest
- 1 tsp lemon juice
- 2 and 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 and 1/4 cups lemon chips
Preheat oven to 375 degrees.
Cream butter with sugar until it is light and creamy. Add in the eggs, pudding, lemon zest, and lemon juice. Whisk together the flour, baking soda, and salt. Combine flour with butter mixture until it forms cookie dough.
Mix in lemon chips.
Drop by spoonfuls on parchment lined baking sheets; bake for 8-10 minutes. Cool for 1 minute on the pan and then transfer onto a cooling rack.

These look like the perfect bite of lemon, and in a cookie!!! My friend that lives in Minneapolis does a lot of food shopping for me, and tonight we were talking about her finding a Middle Eastern grocery store to find some ingredients for me. I will have to add lemon chips to her shopping list!!

Thanks Kris! Oh that is so nice of her! I am so very lucky to live in a city that has plenty of Middle Eastern stores, bakeries and butchers. They carry a lot of specialty foods from Turkey that we love too. If she can’t find the lemon chips let me know, I will send them to you, oh and if you need some Middle Eastern spices or herbs or non perishable items let me know! 🙂

I followed the recipe exactly, and although the taste was nice (very lemony as expected), mine did not look anything like the ones in your pictures. I made two batches for a cookie exchange, and I won’t bring them. I’d recommend refrigerating the batter for an hour or so, to help them from spreading (note that my home is steady 69-70F so not really a warm place). We will enjoy eating them at home (not a bad thing except for our waistlines), but I fear they are ugly ducklings. I am not sure what went wrong as my cookies usually work out quite well.
Hmm I wonder, maybe refrigerating would help. Did you use parchment paper? Did you flatten the dough when you placed them on the cookie sheet? I am just trying to figure out why they spread. I am glad you are happy with the taste and that you found them lemony 🙂 Hope they work out for you better next time Hannah!
These look great! I wanted to try them out, but I was unsure about one thing… are we supposed to make the pudding before adding it, or just add the pudding powder? I hope that’s not too dumb a question, I just don’t want to mess them up! 😉 Thanks!
Not dumb at all Kelly, thank you for asking 🙂 Add the pudding powder to the batter dry out of the box. Funny I have been craving these cookies, and I cannot find the lemon chocolate chips anymore, time to get some online! Enjoy 🙂

I just made these cookies and they turned out great! I didn’t have any lemon pudding so I substituted with vanilla and added extra lemon zest. I will make these again for sure. Thanks for sharing the recipe.

Can cook and serve Lemon pudding mix (Jello Brand) be used? Sadly don’t have instant pudding at home. =(
Hello, from what I know of instant and cook and serve they are made and prepared differently. Not sure it would work, I would wait until you can get some instant 🙂 But if you are willing to try it out you may, but I cannot promise it would work out as I do not know.
